Sous Chef Position
Job Location: South Fork, Colorado
 
Job Overview
We are looking for a creative and proficient sous chef in all aspects of food preparation to assist the head chef.
 
Job Responsibilities
Plan and direct food preparation and culinary activities
Help to develop and modify restaurant and banquet menus
Develop written recipes and standards for all menu items
Estimate food requirements and food/labor costs and achieve overall kitchen budget goals
Help to supervise kitchen staff’s activities
Assist head chef in the recruitment, management and training of kitchen staff
Rectify arising problems or complaints
Prepare food (ability to prep, sauté, grill, fry, etc.) and assist head chef in giving plates the “final touch”
Assists the head chef in working with Food & Beverage Director on vision, menu development, special projects and events, financial goals, etc.
Perform administrative duties, including food orders and inventory
Comply with nutrition and sanitation regulations, safety standards, product rotation and labeling
Helps to place food orders and works with vendors to ensure proper quality and food budget compliance
Responsible for assisting with all weddings, tastings, banquets and other events
Performs on-going research (competition, magazines, books, etc.) to remain current with food and dining trends
Other duties and responsibilities will be assigned by supervisor
 
Requirements
Proven working experience as a sous chef
Excellent record of kitchen work and skills
Ability to spot and resolve problems efficiently
Capable of delegating multiple tasks
Communication and leadership skills
Keep up with cooking trends and best practices
Must be able to perform basic computer skills such as Excel, Word, and Outlook, restaurant management software and POS
BS degree in Culinary science or related certificate, or sufficient experience
Must be able to lift 20-40 pounds on a regular basis, stand on feet up to 8 hours at a time
Good interpersonal skills required to communicate professionally and courteously with cooks, front of house staff, sales staff, marketing, finance, golf shop and management.
Must be friendly and able to communicate with members and guests.
Must be able to work weekends, days, nights and holidays based on event schedule and be flexible according to our banquet events.
Strong organizational abilities and effective time management skills a must.
Golf and or private club experience is a plus.
