Jimmy's Gyros Food Truck Summer Restaurant Internship: Entrepreneurial Intern

Jimmy's Gyros Food Truck seeks Entrepreneurial Intern for summer. Our ideal candidate has robust prior experience in high end restaurant settings preferably in an operations role.


The internship will consist of the following projects and duties:
  • Creating a weekly P&L statement to evaluate food, beverage, and labor costs
  • Developing a recipe book and prep sheets
  • Analyzing sales data, adjusting menu offerings, and running food specials in addition to core Greek food menu
  • Working with marketing team on promotions and specials to drive business
  • Researching Jimmy's competitive set
  • Ordering food product, conducting inventory and maintaining desired food cost
  • Managing kitchen prep, ensuring quality product and maintaining kitchen cleanliness 
  • Executing offsite events with Calissa’s event team

Interns will be managing and operating Jimmy’s Gyros food truck, based out of Calissa restaurant, in both a la carte and offsite private event capacities. Intern should have deep working knowledge of kitchen operations, how to manage a small business, and an entrepreneurial spirit.

The internship dates are flexible based on candidate's school schedule. Civetta Hospitality promotes from within (two of our current partners started as interns).

Typical Workload
Interns typically work a total of 25-55 hours a week, depending on location, time of year and the needs of the business. Depending on your experience, desire to work and the needs of the business, you may be scheduled for 10-35 hours of on-the-floor restaurant work in a position to be determined in the restaurant, such as host, food runner or polisher. 

Ability and willingness to work evenings, weekends five to six days per week are required for this internship. You may be scheduled to work at a sister restaurant during the course of your summer to gain a well rounded understanding of our overall group operations.

Project work and on-the-floor work is paid at New York State Minimum Wage or Tipped Minimum Wage in the county of their employment and/or as otherwise reflected in their offer letter. Pay up to $22 per hour for on-the-floor work may be possible for candidates who demonstrate mastery in the area early on in the summer.

Additionally, you will be scheduled for 20-25 hours of unpaid, for-credit training during the first week of your internship (and any additional training required, such as for a paid, on-the-floor position). Housing will not be provided. Travel time is a requirement of the internship and will not be paid or reimbursed.

This seaside restaurant has a rooftop with an ocean view. Bar Marseille serves Provençal cuisine paired with a robust wine list from the South of France. The design in inspired by the eclectic port city of Marseille and the French Riviera. Bar Marseille received a positive review from Pete Wells in April 2020.

Juniper
Juniper is located in Westbury, Long Island and features an American menu with a focus on local ingredients, steak and a serious beverage program.
